You asked me for another ,,What I eat in a day” Post and here it is- all new with some delicious recipes and a lot of healthy & vegan inspiration! I took you with me one day and captured all the food I had on a regular Home-Office day. The dishes that I show you are all favorites of mine. Especially the Mexican salad. Soo good- we make it at least once a week as a salad or put it in a wrap. Yummy! I hope you like my food diary, let me know if you want more of it. Maybe with specific topics? 🙂
Breakfast: Banana-Mango-Smoothie-Bowl with Toppings
Mhmm- so fresh! This delicious Mango-Banana Bowl is super easy to make! For this recipe, I blend up a handful of frozen mango, 3 bananas, some Vanilla and a little bit of water until it has a smooth (not too liquid) consistency. Then I top it with some favorites like frozen raspberries, blueberries, grapes, chia seeds, coconut and so on. You can top it with whatever you like 🙂 So quick and healthy! Snack: Grapes & my favorite juice
I always need a little something between breakfast and lunch. Especially when I’m sitting on my desk all the time. Sometimes I eat some cashews, apple slices or soy yogurt but since I have a new juicer, I can’t live a day without some delicious and fresh juice. This one is with ginger, carrots, apples, blood oranges and lime. So incredibly refreshing!
Lunch: Summer Roll Bowl with Peanut Sauce
I just love Asian food. Especially summer rolls, they are my favorite! But since we ate them a lot lately I tried to bring some variety in our meal plan, I created a summer roll bowl with carrots, avocado, cucumber, red cabbage, roasted sesame oil and seeds and a delicious peanut sauce. For the peanut sauce, you need 2 tablespoons of peanut butter, 2-3 tablespoons of soy sauce and a little sprinkle of agave syrup, salt, pepper, 3 tablespoons of water and garlic. Mix ist all up until you have a smooth sauce. So tasty!
Dinner: Mexican Salad with Chickpeas and Cashew Sauce
Like I already mentioned before, this salad is my absolute favorite recipe ever. We make it at least once a week, mostly on the weekends. The salad consists of cherry tomatoes, avocado, spring onion, pomegranate seeds, sweet corn, and baked chickpeas. The sauce is super creamy, cheesy and delicious: 2 tablespoons of cashew butter, 2 tablespoons of nutritional yeast, 100ml of water, 1 teaspoon turmeric, salt, pepper, garlic. Blend all up and mix with your salad.
