Baked Sweet Potato with Guacamole and Pomegranate

If you like simple and delicious lunch dishes, you’re definitely right here. Today I have a recipe for you, which happens to be one of my all-time favorite lunch recipes: Bakes Sweet Potato with Guacamole and Pomegranate. The great thing about this yummy dish is, that you can totally personalize it with your favorite toppings. I decided to go for a creamy and fresh Guacamole, Pomegranate seeds (they are my favorite), a little bit of sweet corn and leftover veggies I had in the fridge! But you can also create an Asian baked sweet potato with some sesame oil, tofu and curry sauce or maybe Italian with balsamic, basil and tomatoes? You can get really creative here 🙂

Baked Sweet Potato with Pomegranate Seeds and Guacamole
Serves 2
  1. 2 sweet potatoes
  2. juice of 1/2 lemon
  3. 1 Avocado
  4. 150g sweet corn
  5. 1 pomegranate
  6. salt, pepper, garlic
  7. Veggies of your choice
  1. Wash and rinse the sweet potaoes, then use a fork to put some holes in the sweet potatoes
  2. Place them on a baking sheet and let them bake for about 45-60min (depends on the size) at about 200 degrees.
  3. While the sweet potatoes are in the oven, we prepare the toppings. For the guacamole: Smash 1 Avocado with a fork and mix it with the lemon juice, some garlic and salt and pepper
  4. Now peel the pomegranate and cut the veggies you like
  5. When the sweet potatoes are ready, you can cut them in half and fill them with the toppings
  6. Be careful: the sweet potatoes should cool down for a few minutes
